Sorted by how long it has waited, not by table, because a kitchen works the clock. It reloads itself every twenty seconds so nobody has to touch it with floury hands.
One tap takes a dish off every ordering screen, with a note saying why so the floor can tell a guest. It is not deleted — it comes back tomorrow with its history intact.
